Our burgers are hand-made in house, from 100 percent British beef and served with a variety of toppings to suit any appetite. Black and Blue have unusually purchased their own butchers shop, Jefferies, which we are very proud of.
This came about because the owners, Nick and Alan, were regular customers of Jefferies, a small retail butcher in Kingston. They thought the quality was so good that they persuaded the butchers to make all their burgers exclusively. By retaining the staff, Black and Blue now operate the butchers as a wholly owned business, ensuring continutity and careful control over the quality that we demand for our burgers.
Our fantastic supply of fish comes direct to us from Borough Market Fish, courtesy of Jackie and Les. Our fish selection includes: Indian ocean yellow fin tuna steaks, king prawns, smoked salmon and sumptuous salmon steaks.
The owners, Nick and Alan, had a favourite mountain restaurant when skiing in Courchevel. Each day there they would have lunch at the Bel Air and especiallyloved their famous salad. This is a signature salad of lettuce, walnuts and grated Emmental cheese but with a great secret dressing to enhance it. After some persuasion the owner divulged the recipe to the owners of Black and Blue, creating much delight for our customers.
One of the owners, Alan Bacon, shops regularly in the daily food market in Forvill, Cannes. It was there that he first tasted the foie gras from a small specialist in the south of France. He persuaded the farmer to become the regular supplier for the Black and Blue restaurants and this personal relationship has maintained the high standards ever since.
